Bottle conditioned, Off-dry sparkling cider

This is our second vintage making Seymour Blend as we enjoyed the complexity of the 2020 blend so much! It is much the same in character, but due to inevitable variations in the fruit, which are renewed by each season, it is in many ways a completely different cider. We find it to be drier, yet still with a lovely background sweetness. Tannins more present than before as are more hay-like aromas.

The Story
We thought it would be fun to make a blend that was a nod to the heritage of the village, Bratton Seymour, where our cider production HQ is based. ‘Seymour’ is rumoured to be a corruption of the French ‘Saint-Maur’ and we liked the idea of using apples that originally hailed from France, were grown in Somerset and married with Somerset apples in the tank.

Of the three ciders, Seymour Blend is possibly our favourite. It’s a brave cider, with a full bittersweet astringency we find toothsome, quaffable and very much at home in Somerset.
