Made in collaboration with Gergovie Wines! This small edition of 60 bottles uses a natural wine from the South of France as a base, freshly cut herbs and flowers from our Somerset HQ, including golden marjoram, sage, lemon verbena, fig leaf and lots of fresh rose in combination with citrus peel and roots such as Angelica. The wine used has structure enough to be transformed into a sweet vermouth; we really wanted to make a caramel in the old-style and for this we used the prized Rapadura sugar from Monmouth Coffee. The finished vermouth is dark, almost cola-coloured and reminiscent of some Spanish vermouths from Madrid. It is also intensely floral, with pronounced bitterness, balanced by the complex sweetness of the caramel.

Drink it with plenty of ice, a slice of orange and a splash of sparkling water. We highly recommend using our Sparkling Elderflower here as it adds even more complexity and contributes to the vermouths aroma of freshly cut flowers. Saluti!
